Hachee

Ingredients

  • 350 g lean beef (featherblade for instance)
  • 400 g onions
  • 2 spoons of flour
  • 250 ml beef stock
  • 2 spoon white wine vinegar
  • 2 bay leaves
  • 4 cloves
  • 3 chopped tomatoes
  • brown sugar

Preparation

Peal the onions and cut them in pieces. Cut the beef in cubes and sprinkle pepper and salt. Stew the beef by melting butter in a large frying pan and bake the beef golden. Take the beef out of the pan and fry the onions and brown sugar for 5 minutes. Put the beef back in and add the flour, stir well and fry for another few minutes (to make it spicy add a half red Chili pepper and three spoons of curry). Pour the wine vinegar and beef stock in the pan and add the herbs (you can also add 300 gr. of carrot).

Bring the whole to boiling point and leave the lid half over the pan, turn the fire down and stir now and than. After about 2 and a half hour of soft cooking the beef stew is ready. Remove the bay leaves and cloves and bring to taste with salt and pepper. Very nice with mashed potatoes.

Variety tip: Beef stew with tomato and red wine. Cook the beef stew to according recipe and add 1 clove of garlic and 3 chopped tomatoes with the onions. Take instead of wine vinegar 2 spoons of balsamic vinegar and replace the 100 ml of beef stock by wine.

Ingredients

  • 500 g onions
  • 2 shallots
  • 150 – 200 g salami
  • 1 can of croissant dough
  • 1 spoon oil
  • 1 spoon breadcrumbs
  • 3 eggs
  • 1,5 dl milk
  • pepper
  • salt
  • parsley
  • 2 spoons grated cheese

Preparation

Pre-heat the oven on 225 Degrees Celsius. Skin the onions and 2 Shallots and cut them in rings. Cut the Salami in small cubes. Heat 1 spoon of oil in the pan and fry the onion and shallot rings, without turning the colour.

Fry the salami for about 2 minutes together with the onion and shallot rings (without turning the colour of the onions). Grease a low baking dish and put the croissant dough in the baking dish. Prick with a fork several times in the dough.

Sprinkle the dough with the breadcrumbs and put the onions and salami in the baking dish. Whisk the 3 eggs with 1.5 dl milk, add some pepper, salt and parsley and pour this over the onions.

Spread the grated cheese on top of it and bake the onion pie in about 30 minutes golden. Serve the pie lukewarm.

Ingredients

  • 750 g onions
  • 300 g apples
  • 150 g raisins
  • 1/2 dl white wine vinegar
  • 10 cloves
  • 1 spoon of grated ginger
  • 2 cinnamon sticks
  • 1 teaspoon of sal
  • 500 g jelly sugar

Preparation

Clean three jam jars (volume 450 gr.) thoroughly. Skin and chop the onions, peel the apples and remove the core and cut the apple in parts. Boil the onions with the apples, raisins, vinegar and herbs for about 30 minutes on low fire.
Stir the jelly sugar with the rest and let the whole cook for another 5 minutes. Fill the jars and close them, they can be perserved for about 6 months (do not forget to label the jars with a date).

Boerenkool met tomaat en ui

Ingredients

  • 800 g cut kale
  • 700 g potatoes
  • 4 tomatoes
  • 2 onions
  • 1 dl whole milk
  • 4 spoons of vinegar
  • 2 spoons margarine
  • salt
  • pepper

Preparation

Peel the potatoes and wash them, put them in a pan with some water and put the kale on top. Cook the kale and potatoes in about 25 minutes. Skin the onioin and chop it finely and wash the tomatoes and cut them in quarters.
Heat a frying pan and grease the pan with one spoon of margarine and fry the onions for about 3 minutes than add the tomotoes and fry for another 2 minutes. Drain the potatoes and kale and add 1 spoon of margarine, vinegar and warm milk and mash it together. Put the tomato and onions in the mash and add pepper and vinegar to taste
